SBC Day 18: A Lovely Recipe For Lovely Loved Ones (!)

Summer Blog Challenge - Today's prompt is 'A Recipe You Love'. Hahaha. I like this topic so much as much as I like to eat and to cook. Mwahaha. I have some (many of them actually) recipes that I love but there's a recipe that I do really love. Golum as well, he does really like this dish. :p It's called as Ikan Masak Merah (Fish In Spicy Red Sauce). Fish In Spicy Red Sauce is a popular Malay dish (in our country Malaysia) which is spicy and sweet at the same time. The fish are first deep-fried to a golden brown then slowly simmered in a spicy homemade chilli sauce. Actually, I'm so scared to fry fish before. I was fighting hard in the kitchen whenever it  comes to the fish-frying session. (Laugh) I do not like the 'jumping-oil' whenever I put the fresh and marinated fish into the hot oil. But, thanks to my aunt who's living in Tamparuli, she taught me the technique to avoid the sticky-fish problem to make less of the 'jumping-oil' effect. Hohoho. Love you Aunt Doreen! ;)

Let's see for the ingredients of this recipe ok! :)


1. Ingredients for Frying Fish:
1 Fish (usually used is the huge black pomfret fish) where the belly veins are washed and cleaned.
1 Teaspoon of turmeric
Enough oil for frying
2 pinch of salt (depends on the size of the servings too)

*Blend this item (used some for marination part)*
1 large onion
2 cloves garlic
1/2 inch ginger
1 stalk lemongrass (medium size)

2. Fish in Spicy Red Sauce Ingredients:
3 tablespoons chilli paste
2 tablespoons chili sauce
1 cinnamon stick
2 cardamom
2 cloves
1 star anise
1 red chilli (cut lengthwise 2)
1 tomato (cut into quarters)
1 large onion (diced or circles)
1 teaspoon of sugar
1 tablespoon of lime juice
salt to taste

3. Garnishing Ingredients:
Spring onions (cut to small pieces)
Coriander leaves 

4. Method/Dish Preparation

First, rub the fish with turmeric powder and salt evenly. Put some of the blended items and keep aside for 10-15 minutes to let the  ingredients taste be absorbed into the fish (marination). 

Second, brown the pomfret in the hot oil until golden on all sides till crispy. Remove it from the skillet and set aside.

Third, remove excess oil from the skillet, leaving about 2 tablespoons. Cook and stir the blended items, chilli paste, chilli sauce, cinnamon, cardamom, cloves and star anise until fragrant (about 5 minutes).

Fourth, reduce heat to medium, add tomato wedges and sliced red and green chillies, lime juice, sugar and salt to taste. If the sauce look small and not enough to cover the fried fish, add 1/2 cup of water, stir it for a while and then add some more chilli sauce into the ingredients. Add sugar too, if you find the spiciness of the sauce increased. Stir the sauce about 3 - 5 minutes and turn off the heat.

Fifth, place fish in a bowl and pour sauce over the fish. Garnish it with spring onions and coriander leaves. Serve hot with plain rice!

My Tips:

Besides of just pouring the sauce over the fish after the sauce cooking is finished, I prefer to cook together the fish with the sauce.

To do this, first, after stirring up the sauce about 2 minutes, wait for it to be boiled and then stir it again for few seconds.

Second, carefully place the crispy fried fish into the boiling sauce, make sure the sauce is just enough to covering all sides of the fish. Close the skillet and wait for 1 minute.

Third, open the skillet and then turn the fish to the other  side of it. Close again and wait for another one minute.

Now the dish is almost ready! Now we can place it in a bowl, and start garnishing it!

By cooking it in this way, I found that this can help to make the fish meat is softer inside and also allowing the sauce to be absorbed deeper into the fish meat. :)


That's how this recipe that I love is prepared! Serve it hot and fresh on the table with ready plain rice, prepare some juicy drink and let the wonderful fragrant scent of the dish filling up the dining area. Now you are ready to call that someone special to enjoy the foods! Hahaha. :)
